1 Medium Spaghetti Squash or Whole wheat thin spaghetti prepared
1 Cup of your favorite spaghetti sauce warmed
For the Meatballs
1lb Ground Turkey (I find the 85/15 or 87/13 works better then the 90/10)
2/3 Cup Italian spiced bread crumbs
1/2 Cup plain greek yogurt.
1/4ish cup grated Parmesan cheese
1/4 Cup fresh chopped or dried parsley
1/4ish cup chopped sweet onion
1/4ish cup chopped (but not to small) Baby Bella mushrooms
2 Large cloves garlic fine chopped
1 tsb Kosher or sea salt
1 tsb Italian seasoning
1/2 tsb fresh ground black pepper
Preheat oven to 375 degrees
Line a large rimmed baking dish with foil
In a large mixing bowl combine all ingredients except turkey and fold until completely mixed
Fold in turkey with you fingers until evenly mixed
Roll into 1.5 inch balls and place evenly on baking sheet
Bake until cooked thru. Between 18 and 30 minutes depending on the size of your meatballs.
Place meatballs over the Squash or pasta and cover with sauce and a few shakes of Parmesan cheese
Serve and enjo.
